Raspberry Pi w/ cellular modem if they don’t have wifi. Very trivial to set up.
Also a good opportunity for you to familiarize yourself with a foreign technology using logic and intuition.
Work for the accomplishment, feel good about your product.
Be taught, don’t be dragged into the unknown. Break and fix.

Unless you’re going zero 2w (and even then), old mini pc is a better buy.

Why? They’re not cheaper and are bulkier. In the context of internet safety, they’re also safer.
You can configure a RPI to do exactly as you need it to do. Not more, not less.

What resolution is the recommended pi able to output?

Almost any

Even the cheapest models can render a static website at full HD.

Just the compute? Less than a 9x13 of overnight kugel from a decent kugelmacher.
Make that two if you’ll include an AI subscription.

Tighter control, security through obscurity (most won’t even understand the slim board is a computer).

Bonus: Can programmatically control SSH tunnel for remote access.

We may as well get something that is guaranteed to work longer and uses less power and won’t glitch

N100 can handle Windows just fine

I got mine for about 160ish with 16gb RAM 512gb NVME at the time
